Our winemaker Josep Mitjans has worked intensely over the last few years to promote the production of natural wines. Through highly controlled fermentations, aiming to maintain coherence with the philosophy applied in the vineyards, he is promoting more respectful wines from their origin through to the table.

 

The objective is to maintain the maximum expression of the fruit in the wines with all its nuances, to achieve the purest expression of each variety. He has recovered the use of the amphora, a tradition that goes back over 3000 years, rediscovering the value of a noble vat that lets the wine breathe and keeps it fresh.

 

Our sparkling wine, made under the auspices of Clàssic Penedès (DO Penedès), is the expression of our territory. The secret of all great sparkling wines is an excellent base wine that undergoes the secondary fermentation in the bottle.
